Musso & Frank Grill will be operating as close as possible to normal when the classic Hollywood dining spot reopens on Friday, June 26, according to chief financial officer and proprietor Mark Echeverria.

“As people start to venture outside a little more, inevitably they’re going to notice that everything has changed around them. And we want Musso’s to be that place that has changed the least,” he said in a phone interview.

Musso & Frank is a century-old restaurant on Hollywood Boulevard, near such landmarks at the TCL Chinese Theatre. It opened in 1919 and marked its 100th anniversary in September, shortly after it was featured in Quentin Tarantino’s “Once Upon a Time … In Hollywood.”

“Quentin wanted to showcase that Hollywood has some great history and very authentic places,” said Echeverria, a descendant of founder Joseph Musso. “For us, it really hit home that what we do here is very important. We are really the stewards of Hollywood history.”

When restaurants were told to shut down their dining rooms in mid-March amid the novel coronavirus pandemic, he opted to close Musso & Frank rather than attempt takeout and delivery.

The decision to reopen brought some tension, followed by relief when the first night was fully booked two hours after Musso & Frank started taking reservations.

“Talk about the first tear of joy I’ve had in three months,” Echeverria said.

He said he paid his staff for the first month and through the Paycheck Protection Program was able to avoid furloughs until June 5.

“So we made it really far, but now with us opening a short period of time later, they’re still all in great spirits and morale is fantastic.”

The opening comes with several social distancing and safety measures, dinner hours only, and required advance reservations.

But the menu isn’t changed.

“A lot of restaurants for many, many reasons are taking this as an opportunity to change the menu. We are doing the exact opposite of that,” Echeverria said. “We’re not only maintaining the integrity of what the menu has always been, we’re not even changing the prices. We want people to find Musso’s as a place is reflective of what they’re used to.”

The restaurant has a long menu of steaks, roasts, chicken, and Italian dishes with entrees ranging from $19 to $52.

Friday’s opening will be without one of Musso and Frank’s signature dishes, chicken pot pie.

“We only make pot pies on Thursdays,” Echeverria said. “But we’re going to make a bunch of them on that first Thursday we serve them, you bet.”

He is expecting another entree to be popular on Friday.

“I’m willing to bet anything it’s going to be the filet mignon.”
